The Dinner Champion!

“Beef. It’s what’s for dinner.”

Lately, that slogan has really rang true for this household. With a growing family that eats a lot and wants it NOW! (ha) ground beef has become my life saver in a sea of chaos for quick, nutritious, and delicious family meals. Since our lives have been overtaken by BEEF lately, I thought I would begin to highlight our amazing meats with some of my favorite go-to recipes. These meals are truly staples in our house and I hope they will become your family favorites as well!

This week, I want to share with you my favorite Beef Chili recipe. It is quick and easy and truly packs the flavor. The spice level on this dish is mild to medium and my three year old devours it with a little sour cream mixed in. Interestingly enough…I pretty much despised chili as a child. I don’t know why, but something about the texture of the beans just wasn’t doing it for me. Luckily, my palate is more refined now :) and I can’t seem to get enough chili lately. It must be the snow that hasn’t really stopped since…well, I can’t actually remember when the snow started this fall/winter. It’s been that long! All I want is a nice big bowl of chili with some cornbread with a generous smear of butter and honey. Ahhh. Now I’m hungry!

Anyways, the point is that my whole family loves this recipe, which I think makes it worth sharing with all of you! So without further ado, let’s get to the recipe.

Here is what you’ll need to make this delicious Beef Chili:

  • 1 lb Mystic Hills Farmstead Ground Beef

  • 2 tablespoons avocado oil

  • 1 yellow onion, diced

  • 2 tablespoons tomato paste

  • 2 1/2 tablespoons chili powder

  • 2 tablespoons cumin

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon smoked paprika

  • a small pinch of cinnamon (optional)

  • 1 1/2 teaspoons salt

  • 1/2 teaspoon pepper

  • 1 can tomato sauce (8 oz)

  • 1 can diced tomatoes (14 oz)

  • 1 can great northern white or kidney beans (drained and rinsed) (16 oz)

  • 1 1/2 cups water (or any broth you have on hand)

  • Salt and pepper to taste

To make the chili, start heating a large pot on the stove over medium-high heat with your cooking oil of choice. Once hot, add in your diced onion and let cook on medium-high heat for 3-5 minutes until it starts to get a bit translucent. Next, add your Mystic Hills ground beef to the pot and cook until browned and just cooked. Meanwhile, combine your chili powder, cumin, garlic and onion powders, paprika, cinnamon (if you choose), and salt and pepper in a small bowl. Add the seasonings to the onion and beef, along with your tomato paste. Cook the seasonings and tomato paste for 1-2 minutes to allow the flavors to meld. Next, add in your can of tomato sauce, the diced tomatoes, the can of beans and water or broth. Stir to combine. Let come to a boil then turn down and simmer for 10-15 minutes. Taste and adjust any salt/pepper as needed. Serve with corn bread, sour cream/cheese, and any other toppings you wish. Enjoy!
